Kaffir lime

Djeroek limo or the Kaffir lime is a small (2-5cm), structured, green citrus. The lime grows on a common shrub from Southeast Asia. The fruits are most commonly used in the kitchens of Thailand and Laos. The lime tastes and smells like lime, but then just a bit more intense, perfumed.

The lime variety is mainly used for the skin. The rasp goes through the curry pastes and boemboes. Note that you do not take the white ash more, because that is even more bitter than with normal citrus fruits.
